Baked Sweet Potatoes (Yams)     Back to Vegetable Dishes Menu     Printer Friendly Page

Serves 6

5 cups sweet potatoes -- 3 medium potatoes
1/4 cup brown sugar -- packed
1 tablespoon molasses
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3 tablespoons butter -- melted
1/3 cup carnation milk
salt and pepper -- to taste
1 cup miniature marshmallows -- (more if desired)

Peel and cut sweet potatoes into chunks. Cover with water and cook until tender. Place the cooked potatoes in a casserole dish. Combine the brown sugar, molasses, butter, carnation milk, and all seasonings. Pour the mixture over the cooked potatoes. Sprinkle the marshmallows over the top and place in a 350 degree oven and cook until the tops of marshmallows are browned. It should take about 15 minutes.
