Cheese Cake Class

Crush Cookies Add Butter Mix Completely Press Crust into Pan
Using a rolling pin, crush the cookies or graham crackers. Next add the sugar and cinnamon. Mix well. Pour the melted butter into the mixture and mix until all of the crumbs are coated with butter. Pour the crumbs into the springform pan and using your hand press the crust into the pan making sure it reaches the sides of the pan.


Softened Cream Cheese Add Rest of Ingredients Mix Completely with Hand Mixer Mix Until Batter is Smooth
Place the softened cream cheese in a mixing bowl. Add the eggs and sugar. Add lemon juice if called for or other seasonings. Use a mixer to blend the batter. Beat until smooth.


Pour Batter into Pan Spread Filling to Edge of Pan Add Sugar and Seasonings Mix Well
Pour the cheese cake batter into pan and spread to the edge. Prepare the fruit topping by adding the sugar and seasonings. Mix well and set aside.


Add Ingredients Cut in Butter Spread Fruit Topping Add Streusel Topping
Combine the Streusel ingredients and use a pastry cutter to cut in the butter. Continue until the mixture has a coarse meal texture. Bake your cheese cake in a 375 degree oven until lightly browned and filling is set. If using cherry, strawberry, blueberry, blackberry, etc fruit topping, remove springform pan and let cool completely. Add the fruit topping. If making the "Apple Pie" cheese cake put the apple topping on the hot baked cheese cake.


Spread Filling to Edge Add Streusel Topping Cover with Streusel Topping Return to Oven for 15 Minutes
Spread the apple topping over the top of the hot cheese cake. Sprinkle the Streusel Topping over the top of the fruit topping. Return the cheese cake to the oven and cook for another 15 minutes.


Remove Springform Pan Slice and Serve
Remove from oven and remove the springform pan and let cool completely. Slice and serve.
