Serves 4

4 chicken tenderloins
2 eggs
3/4 cup flour
3/4 cup bread crumbs
salt and pepper to taste
Sauce       Simple Italian Sauce


With a meat hammer beat the chicken tenderloins until very thin. In a flat bottom bowl beat the 2 eggs. Dredge the chicken in the flour, coating both sides. Now coat both sides in the beaten eggs. Now dredge the tenderloins in the bread crumb mixture,coating both sides. In a large skillet heat enough oil to fry the chicken pieces in. When the oil is hot place the chicken pieces in the oil and cook until brown. Turn and brown other side. In a baking dish spoon in enough of the Simple Italian Sauce to cover the bottom of the dish. Place the browned chicken pieces in the dish, Now cover with more of the Simple Italian Sauce. Top with grated Mozzarella cheese. Place in a 350 degree oven and bake covered for about 20 to 25 minutes.
