Serves 8

2 eggs -- beaten
1/2 cup flour
1 teaspoon salt
1 teaspoon cumin
pepper -- to taste
2 cups milk
1 pound Monterrey Jack Cheese -- grated
3 cans green chiles -- 4 oz cans

In a mixing bowl beat eggs. Add flour, salt, milk, cumin, pepper, and cheese. Rinse chiles and remove seeds. Place chiles in a 13 X 9 casserole dish (sprayed with cooking spray). Pour egg mixture over chiles and bake in a 350 degree oven for about 40 minutes.
