Serve over rice or pasta

2 tablespoons olive oil
1/3 cup red onion -- chopped
1/3 cup red bell pepper -- chopped
1/3 cup green bell pepper -- chopped
1 tablespoon minced garlic
1/2 cup fresh tomatoes -- chopped
1/4 cup green olives -- chopped
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
1/2 teaspoon tarragon
salt and pepper -- to taste
1/4 cup white wine
1 tablespoon parsley -- chopped
2 chicken breasts without skin -- or 6 chicken strips
crushed red pepper -- to taste
parmesan cheese -- grated
1 tablespoon butter

In a large hot saute pan add 2 tablespoons of olive oil. Add the onions, red and green bell peppers, and garlic. Add the oregano, thyme, basil, tarragon, salt, and pepper. Stir in seasonings. Add the tomatoes and green olives. If using chicken breasts, cut each breast into 3 strips. Add the chicken to the vegetable mixture. Cook chicken on one side until browned. Add 1/4 cup water. Turn chicken and continue to cook for about 15 minutes. Add crushed red pepper to taste. Add the wine and 1 tablespoon of butter and cook for about another 5 minutes. Serve over rice or pasta and top with chopped parsley and grated parmesan cheese.
