Finished Lasagna

Good Eats Lasagna Class

3 tablespoons olive oil
3 tablespoons butter
1 pound Italian sausage
1 cup red onion -- chopped
1 cup fresh tomatos -- chopped
1/2 cup green bell pepper -- chopped
1/2 cup red bell pepper -- chopped
1/4 cup ripe olives -- chopped
1/4 cup green olives -- chopped
2 tablespoons minced garlic
1 teaspoon tarragon
1 teaspoon oregano
1/2 teaspoon rosemary
1 teaspoon basil
1 teaspoon thyme
2 tablespoons tarragon vinegar
1/2 cup red wine
1 can Italian tomato paste -- 5 to 6 oz
1 can tomato sauce -- 15 oz
salt and pepper -- to taste
crushed red pepper (if desired) -- to taste
2 cups ricotta cheese
1 1/4 pounds mozzarella cheese -- grated
1/2 pound parmesan cheese -- grated

Filling: Place the olive oil and butter in a hot skillet. Add the onion and Italian sausage. Brown sausage over medium high heat. When the sausage is browned add all of the seasonings. Now add the garlic, tomatoes, green olives, ripe olives, and bell pepper. Add the tomato paste, tomato sauce, vinegar, and red wine. Mix all ingredients well. Reduce the heat to medium, cover pan with a lid and cook for 20 minutes. After filling is finished add 2 cups of ricotta cheese and mix well.

Pasta: In a large pot add about 3 quarts of water, 2 teaspoons salt, and 1 tablespoon of olive oil. Bring to a boil and add the lasagna noodles. As the noodles soften slowly work them down into the water. Cook until tender.

Spray a 13" X 9" casserole dish with cooking spray. Ladel a thin layer of filling on the bottom on the dish. Now put down a layer of lasagna noodles, then another layer of sauce. Cover this with a mixture of mozzarella and parmesan cheese. Now repeat this layering until the dish is full. Cover the dish with foil and place in a 400 degree oven and cook for 25 minutes. Remove from oven and let cool a few minutes. Cut into squares and serve.
