Prepare the vegetables.
We start our lasagna by adding the olive oil and butter to a hot skillet. I use one tablespoon of a red pepper olive oil as well, but this is optional. Next add the onions and the Italian sausage. Brown the onions and sausage. Next we add all of the dry seasonings.
Next add the chopped bell peppers, and tomatoes. Add the tomato paste and the tomato sauce and all of the liquids (vinegar, water, wine, etc.).
Cover and cook for about 20 minutes. After the filling is cooked add 2 cups of ricotta cheese.
Mix the ricotta into the sauce. Prepare a 13" X 9" casserole dish by spraying with cooking spray. Next spread a small about of the sauce on the bottom of the casserole dish. Cover this layer of sauce with a layer of lasagna noodles. Add another layer of sauce and cover this with mozzarella and parmesan cheese.
Continue building layers until dish is full. Cover the dish with foil and bake in a 400 degree oven for about 25 minutes. When lasagna is finished remove from oven and let cool a few minutes to let it set. Cut into squares and serve.
