1/2 cup butter -- softened (1 stick)
2 1/2 cups sugar
3 eggs
1 tablespoon vanilla
2 cups canned peaches - chopped
1/2 cup whipping cream
1 1/2 teaspoons cinnamon
heaping 1/4 teaspoon salt
3/4 teaspoon baking powder
4 cups flour
1/2 cup butter -- melted (1 stick)

Cream 1/2 cup butter, sugar, eggs, vanilla, cinnamon, and salt until fluffy. Add whipping cream and chopped peaches. Add flour and baking powder and mix until smooth. Add 1/2 cup melted butter and fold in by hand. Do not use mixer. Put dough in refrigerator and leave overnight. Drop chilled dough on a cookie sheet using an ice cream scoop or spoon. Bake in 350 degree oven until lightly browned. Remove from oven and let cool until cookies are firm. Remove from cookie sheet and place on cooling racks to cool completely. These cookies freeze well. Can be removed from the freezer and heated for a few seconds in the microwave to give fresh out of the oven flavor.
