Italian Pepperoni Spaghetti Sauce     Back to Italian Menu     Printer Friendly Page

Serves 6

Serve over your favorite pasta and top with some grated parmesan cheese.

1 1/2 cups pepperoni -- diced
2 tablespoons olive oil
1 tablespoon red pepper olive oil
1/2 cup red onion -- chopped
1/2 cup red bell pepper -- chopped
1/2 cup green bell pepper -- chopped
1/2 cup fresh tomatos -- chopped
1/4 cup green olives -- chopped
1/4 cup ripe olives -- chopped
2 tablespoons garlic -- minced
3 bay leaves
1 teaspoon basil
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon tarragon
1/2 cup red wine
1 tablespoon tarragon, red wine, or balsamic vinegar
1 can tomato paste -- 6oz
2 cans tomato sauce -- 15 oz cans
3 tablespoons butter
salt and pepper -- to taste

In a dutch oven or large skillet add the olive oil. Add the onion and saute'. Add the bell pepper, tomatoes, and olives. Now add all of the spices, the vinegar and the red wine. Add the diced pepperoni, tomato paste, and tomato sauce. Add salt and pepper to taste. Turn heat to low and cook the sauce, covered, for another 45 minutes. Serve over your favorite pasta.
