Serves 4

4 chicken tenderloins
3/4 cup bell pepper (chopped)
3/4 cup onions (chopped)
2 teaspoons granulated garlic
2 medium potatoes (thinly sliced)
1/8 cup sugar
1/4 cup balsamic vinegar
1/2 cup olive oil
salt and pepper to taste


Slice the tenderloins into thin pieces. In a hot skillet add the 1/2 cup of olive oil. Put the onions, bell peppers, chicken pieces and the thin sliced potatoes into the hot oil. Cover and cook until the potatoes are done and the chicken is browned. Add 1/8 cup sugar to 1/4 cup balsamic vinegar and mix well. Pour the mixture over the potatoes and chicken and mix well. Serve with some red cabbage and your favorite bread.
