Texas Macaroni & Cheese

2 cups elbow macaroni
1 tablespoon olive oil
1 1/2 teaspoons salt
6 tablespoons butter
1/4 cup flour
2 cups milk
1 cup buttermilk
3 cups grated cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper

Add 2 quarts of water, 1 tablespoon olive oil, and 1 1/2 teaspoons of salt to a large sauce pan. Bring to a boil and add 2 cups of elbow macaroni. Cook until tender. Melt 6 tablespoons of butter in a sauce pan over medium heat. Mix in 1/4 cup of flour and mix until well blended. Gradually add 2 cups of milk and mix well. Add 1 cup of butter milk and 3 cups of grated cheese. Continue to cook until cheese is melted. Put cooked macaroni into a casserole dish and pour the cheese sauce over it. Mix well and place in a 350 degree oven and cook (covered) for about 50 minutes or until cheese sauce is set.
