Scalloped Potatoes

Serves 6

3 pounds russet potatoes (about 4 medium size) -- sliced 1/4" thick
6 tablespoons butter
1/4 cup flour
3 cups milk
3 cups grated cheddar cheese
1 onion (medium) -- sliced
salt and pepper

Peel and wash the potatoes. Cut potatoes and onion into 1/4 inch slices. In a large sauce pan, over medium heat, melt the butter and then add the flour and mix well. Add the milk and the cheese and continue to cook until the cheese has melted and is well blended in the mixture. Spray a 13" X 9" casserole dish by spraying with cooking spray. Ladel some on the cheese sauce onto the bottom of the casserole dish. Now add a layer of potato slices and several onion slices. Cover this with more cheese sauce. Now lightly salt and pepper this layer. Continue to build layers, adding salt and pepper to each layer, until all of the potato and onion slices are used. Cover the dish with foil and bake in a 375 degree oven for about 1 hour and 30 minutes or until potatoes are done.
