Serves 6

1 pound pinto beans -- 2 cups
3/4 cup red onion -- chopped
1/2 cup green bell pepper -- chopped
2 teaspoons minced garlic
1 tablespoon cumin
2 teaspoons chili powder
1 can Rotel tomatoes
salt and pepper -- to taste
1 pound smoked sausage or browned ground meat

In a good heavy pot add the dried pinto beans and cover with about 2 quarts of water. Add the onions, bell pepper, rotel tomatoes, and all of the seasonings. Bring to a boil, then reduce heat to medium and cook for about 30 minutes. For smoked sausage, cut it into small chunks and add to the pot. For ground meat (pork or beef), brown the meat and drain off any excess fat and then add to the pot. Continue to cook on low until beans are tender (about 2 hours). Add water as needed to prevent burning.
